Collegegirl gave me an idea... I really like cooking and it is sort of a hoby of mine - and an obligation... I would really appreciate if some of you american ledies would share your favourite recipes so I can have new ideas for the future lunches and if anybody is interested I'll share mine. I'd really like to know what you people eat in the US. So what do you say? :D

I'll share with you if you share with me. I should like to know some of the dishes that you prepare over there. Actually, I am going to school for culinary arts, and we have done some international cooking, but mostly we did foods in Italy, France, some German, and we even did beet Borsche!
I guess we will just swap recipes, and if you don't know what we are talking about, just ask us, or if there are ingredients that you aren't familiar with, then we will try to help you out. How are you all on soups? I LOVE Cream of Broccoli. It is a great way to use leftover chicken broth. That way you can make two dishes out of one. I cheated on this one. I looked in a recipe book for the basic measurements, but in the end, I just eyeballed it.
What I did was I had a lot of chicken broth. I took about 2 tablespoons of butter, and melted it in a small pot, and then I added about 1/2 cup of flour. (I think that cornstarch would work about at well). I stirred it together until it was kind of a thick consistancy, similar to mud. Then I added about 4 cups of chicken broth, and stirred. Don't worry, it will thicken, you just have to keep stirring until it does. I left it on to slowly simmer. I took and cooked broccoli (any amount you want) till it was about halfway cooked. You could even put it in the soup to cook it. You can puree the broccoli when it is fully cooked, (but you have to cook it in a separate pot), or you can leave it in big chunks. Just strain it before you add it to your soup. Salt, pepper, and even spice to your taste. I let mine stew (haha) a while, for about an hour. It makes a great dinner to prepare somewhat early, and just leave on the stove. You could also melt cheese in it, and make it a cheese cream of broccoli soup. Cheddar works great.
This goes well with grilled cheese sandwiches. You just butter (optional) one side of 2 pieces of bread, stick a cheese of your choice (preferrably a hard cheese) between the slices with the buttered sides out, and put it in a hot saute pan on the stove, over about a med. heat. Toast one side, and then the other, melting the cheese. Eat while hot. You can dip it in and soup of your choice. Some prefer it with Chicken Noodle soup.
That sounds delicious... I'll try that. I never paid that much attention to cooking a soup. My soup would be: water, meat, all kinds of vegetables iI can find and spices (with a little pasta). That's my over simplified soup.
I don't know wether you heard of what we call musaka. It's origins are in Turkey. A layer of potatoes, a layer of meat, a layer of potatoes again and then cream. It's my favourite although it takes atleast 2 and a half hours to prepare. Ever heard of it? :confused:

I don't think that I have ever heard of it, but I need to add something to mine. I forgot the cream!!! You add it about the time that the broth becomes thick. You can add cream or milk. Either will work.

BTW, when you add the cream, are the veggies and meat cooked, or do you cook it in the oven after you add the cream? That sounds really good. Is it kind of like a casserole-type dish?
Musaka goes like this (I am not very eloquent when it comes to english terms of cooking so make out the best you can):
1. put the oil in a casserole, and onions (if it's a meal for four persons, put 2 big onions - nicely chopped) - fry the onions (don't forget a little spoon of salt), but for a long time - until they are ALMOST brown and burnt, put (I don't know how to say it - not minced meat but the kind of meat that looks like red mashed potatoes :D - please don't laugh) that kind of meat in the casserole and fry that just until it loses that red color.
2. cook potatoes (the amount is about equal as that of mashed potatoes - depending on the number of presons) and salt them. After they are done, slice them into tiny bits and put a half of them in a pan
3. put everything from step one on the sliced potatoes in a pan
4. put the other half of potatoes on top of everything
5. mix half a litre of cream (not the sweet one that is used for cakes but the other), some peper, 2 eggs and a little salt - mix that really good but don't over do it
6. put everything from step 5 on top of everything in the pan and bake it (170 degrees celzius about an hour)
Serve wile hot - when it cools off nobody will want to eat it :o
It is very delicious!!!! :p

I think the type of meat that you are thinking of is ground chuck. Come to think of it, it does remind me of mashed potatoes. I will have to come up with some others. The cream used for cakes is heavy whipping cream, I believe, and the other is either buttermilk or half and half. As for the litre, for those of you that are reading this that don't know how much a litre is, there is just over 4 cups to a litre. 4 cup =.95 litre. I can post the different measurement comversions for anyone who wants it, along with how to convert celsius to fahrenheit, and vice-versa.

Do you guys grill over there alot? And do you have salad dressings that you make/buy? Sorry, I must sound dumb, but I have never traveled out of country before, and I am curious. What type of markets do you have? What type of foods are most common, as in dishes and stuff? We had some Russian brothers eat at our house once, and I know they eat a lot of soup, and they eat open-faced sandwiches. Tell me about your culture, and I will be happy to answer any questions that you have about ours.
Well.... One thing's sure - we (I :D ) LOVE to grill. As much as possible. We have all kind of markets - supermarkets, smaller shops, malls... It's very similar to what you guys have. We also have McDonalds and similar fast food restaurants. Our food is very similar to the Italian cuisine (at least for the part of the country that's near the sea). We that live close to the Meditteranean sea mainly eat meditteranean food - olive oil, fish, spinach, asparagus, smoked ham. The other part of the country is more continental and they eat alot of pork, potatoes, cabbage, sausages, etc.
I can't explain my whole culture in one post.
I never met a Russian, I don't know what's their apetite like. We are both Slavonic nations, Croats and Russians I mean, so we must have a few things in common except similar past (communism I mean ).
But, back to food... You asked about salad dressings - it depends about the salad. If it's regular green salad (grass :rolleyes: , that's how I call it) then we pu vinegar, oil and salt. Other possible spices to other kinds of salads are - garlic, parsely, majoneze, and the list goes on and on and on and on...
Most common dishes are: stake, mashed potatoes, pasta bolognese, musaka :D , fish, baked chicken and potatoes, potatoes with onion (my second favourite next to musaka - do you make it potatoes that way?), vegetable-meat soup and something you surely haven't heard of - SARMA. It's very delicious: kinda like meat balls with sauerkraut - but a little different. It goes great with mashed potatoes. Then we have filled paprika - that's also very delicious (everything's delicious to me isn't it? :o ). And of course, the list goes on and on and on and on...

Sesame Pork
½ cup soy sauce
½ cup Russian dressing
2Tbsp sesame seeds
3Tbsp lemon juice
½ tsp ground ginger
½ tsp garlic powder
½ (1 ½ lb )
2 small onions
1 green bell pepper
1 (15 oz) can pineapple spears, drained
Saffron rice (optional)
Garnish: sliced green onions
Combine first 6 ingredients; remove ½ cup mixture, and chill.
Place pork in a shallow dish or heavy-duty zip-top plastic bag; pour remaining sesame mixture over pork. Cover or seal, and chill 3 hours.
Cut squash into ½ in slices, onions into quarters, and bell pepper and pineapple into 1” pieces. Arrange vegetables in a grill basket; set pineapple aside.
Grill vegetables over medium high heat (350°-400°) 15-20 min, turning occasionally and basting with half of reserved sesame mixture. Remove vegetables from grill basket.
Remove pork from marinade, discarding marinade. Arrange pineapple and pork in grill basket.
Grill over medium heat 4 minutes on each side, basting with remaining sesame mixture.
Toss together vegetables, pork, and pineapple. Serve mixture over saffron rice, if desired. Garnish, if desired.
Yield: 4 servings Prep: 25 min., Chill: 3 hours, Grill: 28 min.
Notes:
When my mom makes this, we don’t use the vegetables. We usually make this x 3-4. She grills the pork and the pineapple together, which gives it a nice warm, sweet flavor. We serve it over yellow rice.

Well, your stuff is a little bit dffrent from ours. I don't know about the kind of food - but we deffinetly don't have the same food companies, right... But, there are always the good old chliches: majoneze, ketchup, chips, burgers, pizza (although your pizza is a little to weird for me :D ), coca cola, fanta, sprite, coffie (but your coffie is a bit watered down for our taste - ours is much stronger), and we don' like cereals as much as you do. I personally ate those maybe two times in my whole life.

It is just easier to buy it than to make it. Do you have ketchup, or catsup (as some call it), mayonnaise, soy sauce, and worcestershire sauce? I think they are used in the recipe when there is no premade Russian dressing available. I have a recipe for that as well.

oz=ounce (16 ounces to a pound)
tsp=teaspoon (3 teaspoons to a tablespoon, 4 tablespoons to 1/4 a cup)
No, this is great. Really. I get to work on my conversions, which will help me at school, and you can work on yours too.

We don' have russian dressing as far as I know... We have katchup! I don't know what soy sauce and worcestershire sauce are so I don't know whether we have that...

Red Velvet cake would have to be one of my most favorite desserts, along with chocolate. I like asparagus and fresh green beans, but then al dente broccoli is also high on the list. You said it sister! I do like food! When I was little, I didn't like vegetables at all, but now they are on the top of my list, but no food can beat pizza -italian pizza (margarita or mista). That and pasta with scampi is my very top - musaka is on the other top of 'everyday food'.

I have heard of them, but please explain the scampi to refresh my memory, and what is musaka? Also, do you use teaspoon and tablespoon measurements over there? What I should do is send you a package containing a basic cookbook, say Betty Crocker, along with a set of teaspoons, measuring cups, and a few unusual devices that you might not see over in Croatia.

That is fine by me. I like different cuisine, and if it I especially like it, I will pass it on to Chef Vallejo, whom I am currently working under at his restaraunt. He comes up with a lot of interesting dishes, tweaking this and that. I will see what other recipes I can come up with. Don't give up ancy! BTW, you still haven't given me your mailing address. :D

I love to cook.. and I'm a Southern girl too. So I'll just leave you with one good biscuit recipe!
Incredibly Easy Drop Biscuits.
2c. Self-Rising Flour
2-4 T. of sugar (depending on how sweet you like your biscuits)
1 stick of cold butter
3/4 c. Buttermilk, or 2/3 c. sweet milk
Oven: 450
Mix the sugar and flour, then cut in the butter. Make a well, and mix in the buttermilk until everything is just mixed. On a greased cookie sheet (or in a cake pan--my personal fav.), Drop tablespoonfuls of dough, 1-2" apart. Bake for 5-7 minutes, or until a toothpick comes clean when pushed through the top of one.
This isn't a traditional Southern biscuit... the type you split open and put ham into (though you can do that, too!) But it is good-- try it and see! :p
What makes these so good is that you handle the dough as little as possible. by just dropping the dough, instread of shaping it. It also helps if you live in the south, and can get low-gluten flour (like White Lillie).
I also love this recipe because it's so versatile-- you can add cheese, dried fruit or nuts, herbs--anything that strikes you as a good combination! (My personal favorite is a mixture of cheddar and parmesan, and thyme)

Well, as I am finding out more and more, most of it is so simple. I had this awesome lemon chicken tonight at the restaurant, with this wonderful sauce. It tasted so complicated, but it was only about 3 ingredients. I think the chicken was maybe marinated in a lemon mixture, or even just floured and sauted, and then it had this sauce. The sauce was made of chicken base, like a cream, and chervil, I think, and reduced. BOY, was it good. And then it had risoto, (I think that is how it is spelled), which is like a creamy alfredo style rice. WOW! I will try to post the recipe. :hungry:

Well, I now have some basics for an alfredo sauce. YOu take heavy cream, and you put in some parmesan cheese, and some garlic, and salt and pepper to taste, and you reduce it, (basically, let it simmer on the stove for a couple of hours until thick), and then you can use it with chicken, or noodles, or whatever. What you do is you cook the noodles, and then taste the sauce (see if you like the tast), and add the sauce and noodles and whatever herbs and seasonings that you want and Voila!

i like cooking... and i love musaka!!! ( i know thats a little late). i used to work at a greek restaurant and i love their food. especially gyros, souvlaki, and SAGANAKI (flaming cheese)

OH!! MORE than interested! I am curious. Hey, if we get enough, we can make a YQ cookbook. :D That would be soo cool. Oh, BTW, turkey leftovers. I made a pretty good Turkey Cheddar soup. :thumbup: Like the recipe that I have for the cream of broccoli, just add turkey and cheddar cheese, and salt and pepper. (I couldn't add broccoli because someone must have eaten it. :D)

hey guys! for a start, here's one of the all time favorite recipes here in the Philippines, the "Chicken Adobo", it's a filipino stew version...You can also use pork (cut into cubes), whichever you prefer. sorry it took me so long to post. enjoy!
Ingredients
3 pounds chicken thighs, cut into serving pieces
1/2 cup white vinegar
1/2 cup soy sauce
1/4 teaspoon peppercorns, crushed
1 teaspoon brown sugar
5 garlic cloves, crushed
3 bay leaves
Salt to taste
Combine all ingredients in a pan, cover, and allow to marinate one to three hours. Bring to a boil, then lower heat and simmer for 30 minutes. Uncover the pan and allow to simmer for an additional 15 minutes or until most of the liquid has evaporated and the chicken is lightly brown. Serve with white rice.

Something that also might happen to help is to explain some of the ingredients and how they help the dish do whatever. Like butter. Butter is a thickening agent, as is flour and cornstarch. If you know something that does something like that, please post it, as I want to be able to know why you do this. Anyone ever had Creme Brulee?

It is like a custard that is slow baked, and then it is chilled, and then before serving, you put sugar over it, and melt the sugar so you have like a hard sugar crust, and then the creamy custard underneath. Wow, is it good. :thumbup:

cooking is fun! and easy...just stick a recipe in front of me and i can make it....most of the time. haha. my specialty was (haven't done any in a while so i'm a bit rusty) translating and making antique recipes on a wood stove heated by fire! wooo. good times. good food. :chef

well, what it is:
I have lived in England for 1 1/2 years (some years ago).
And there I have worked in an african/caribbean care-center for old ppl. Most of them were from the caribbean (mainly Jamaica and Barbados). The stuff cooked caribbean food all the time. Besides this my friends that are living in England are originally from the caribbean (I mean their parents or even grandparents came over to England some good years ago).

yup, Greek-food ain´t bad. I have been to Greece last year. A sister that I know has got a house there - so my friend and I went to visit her. (the greek sister has been living in Germany now for many years. Only in summer-time she goes back home).

HA HA! sign me up too! As far as cooking goes, I have something in common with blessed...my parents are from Trinidad too, so we have grown up with mostly Carribean cooking in our house...uummm. I think alot of ppl. think that it's all spicy, but that's not true. I also like to make Italian and Thai dishes....I'm getting hungery :)

I think spanikopita is like a Greek pie, made with Filo pastry (really thin pastry, you have to use at least 5 layers, and it's all flaky. Very yummy!) mince meat, spinach, dried apricots, and pine nuts. If that's what it is, then it's very yummy!
Not sure what dolmaths are.
Someone mentioned musaka in an early post! I love that!! It's like lasagne made with zuccini instead of pasta. Awesome stuff.
Anyone here familiar with Aussie food? Meat pies (they mentioned that in the guys cooking section... and there isn't even any aussies in there!) and kangaroo steaks!
We also barbeque (grill) alot. It's the guys job to man the barbie! The ladies make the salad & sweets, and try to organise the blokes.
I don't cook alot. I used to when I was in high school, but I don't enjoy it so much now. Mainly because I don't have as much time, and because I find it hard to think what to cook for a family of 8. I find it a real chore. Any ideas will be appreciated!
Right now, tho, I have a roast cooking in the oven! My first ever, that I can remember. I gotta go cut the veggies up now.
Oh... and any holidays... count me in! I LOVE to travel!

You were close on the spanikopita. It is made with Phylo dough, usually with more than 8. It has spinach, Feta cheese, other cheese, eggs, and lots more. It's kinda like spinach pie. It is sooooooooooooooooooo good! I think what you were referring to was baklava. It is also made with Phlyo dough, but with chopped nuts and lots of honey!!!!!!!!!!! Ah, phylo dough! I just spelt it filo. And in Australia we would call it pastry anyway, not dough. Dough is the stuff that isn't cooked. So we both said the same thing! :)

my homemade salsa recipe:
1 whole lime
1 whole lemon
jalepenos to taste
1 8 oz can of tomato paste
12 roma tomatoes
1 green onion bunch
1 bunch cilantro
1 whole garlic
apple cidar vinegar (2-3 tbsp)
spices to taste
in a blender, puree the vinegar, lemon, lime, tomato paste, some jalepenos, and about half of the tomatoes. then, mix in the rest (chopped/minced of course) and enjoy!! (this makes a LOT)

ooh that sounds like good salsa. Azurity i found some recipes for kids. This is just one of them and if you want any more just tell me. ( this probably isn't very healthy though)
Candy Bar pie ( I think most adults would like this also but in the book it is specified for kids)
8 oz cream cheese
8 oz frozen whipped topping (thawed)
4 candy bars (butter fingers are recomended)
1 9 inch grahm cracker crust
In a small mixing bowl beat the cream cheese until smooth. Fold in the whipped topping. Crush the candy bars and fold 1 cup into the cream cheese mixture. Spoon into crust and sprinkle remaining candy bar crumbs over the top. Refridgerate for 2-4 hours.

I lived in Hamburg for just over 10 months. I absolutely loved it and my German improved soooo much. I went to a church in Westertimke which is near a town called Zeven (very small places). My pastor was Bro Adreas Ringen. Where in Germany do you live?
Labskaus is some kind of meat dish with egg, pickle and something else I can't remember. It wasn't horrible, but the meat just had no flavour and I would have liked some potatoes or something with it.

Irish stew is easy to make and if made with mutton and cooked slowly will be both flavorsome and tender. 4 large potatoes
2 large onions
3 or 4 medium carrots
sprig of parsley
2 cups water
salt and pepper

Cut the meat into good size chunks. Peel the vegetables and slice thickly. Chop the parsley. Choose a pot with a well-fitting lid and put in the ingredients in layers, starting and finishing with potatoes. Pour in the water and season to taste. Cover and put on a very low heat for about 2 1/2 hours until the meat is tender and the potatoes have thickened the liquid. The dish may also be made with lamb, in which case it requires only 1 1/2 hours cooking time.

Except one thing silly. You should write them down and put a book together other wise you never remember the first one. Thats what I do with............. Pluse some of them are really good and then you could make them more often. Try it one time and you might be surprised at what you come up with when you write it down. Also its a good way to remember what God is usesing you for

I actually made a pie the other day. It was for dessert at Leah's. It was a peanut butter cream pie. Very tasty! And with organic peanut butter, so it was slightly healthy. I normally hate cooking/baking, but it was kind of fun, except that I made my mom watch me the whole time to make sure I did it all correctly. And I made her pour it into the pie crust, I have this thing about pouring things, I can't pour very well. Just thought I'd let you all know. It was a momentous occasion. I'm even going to make another dessert for a potluck on Sunday! :chef

So, I like my hot beverages hot! Big surprise, eh? Actually, most people don't like them too hot, more like warm, or just over warm. Anyways, I like home-made hot chocolate, so I was warming the milk in the microwave, cause it's faster than the stove, and I didn't know how long to put it in for, so I did 2 min. It still wasn't hot enough, so I did 2 more minutes. Well, after aboout 1 minute, I saw this white tidal wave hit the door of the microwave and then this sickening smell started seeping out of the microwave. I quickly stopped it, and slowly opened the door. A small wave of milk gave leaking over the edge of the microwave and the smell hit me in the face. It took forever to clean up, because liquid has to soak up. And the smell lingered for a few hours.
You'd think I'd learned my lesson. Apparenlty not. I did the same thing again, only this time, I didn't stop the microwave because I wasn't watching it. I set it for 3.5 minutes and came back to find a disgusting mess of milk and milk skin in the microwave.
Needless to say, I did learn my lesson after that. :D

It was quite cool. I should do it somehow with a thermometer to see what temperature milk explodes at. :D I wouldn't suggest trying it, it's smelly and messy. What's really cool is exploding a marshmallow! Now try and explain that to your mom...:D

Speaking of microwaves...a little off the subject, but my teacher was doing some sort of experiment, and they put a cockroach in the microwave for like 10 min, and the longer it was in there, the crazier it became, and he said when they opened the door, it literally zoomed out. Gross.
Being creative in cooking is fun...in small amounts.
But when you have a catering for 200 ppl, and you have to make 400 of the little suckers....
Or perhaps a triple batch of Artichoke and Spinach dip. 16 Quarts we are talking about her folks. I would be willing to share the recipe here, as I gave it to someone else, and they rather enjoyed it. Try it at your local Olive Garden first, as they are similar, (though I haven't had it there either, will probably get it next week). I really enjoy it, but especially hot, and it goes will with tortilla chips.

Earlier this year my sister decided she wanted something like my parents special, microwaveable beanbag that they take to bed, so she "made" her own...Oh dear! She thought, beanbag, dishtowel? What's the difference? She then proceeded to put her wrapped up towel in the microwave for 10 minutes!!! I came out of my room because I could smell something weird and when I got in the kitchen I started screaming; there was smoke coming out of the microwave and a horrible, sulfer-smell. Anyways, my dad could barely get it out, because the fumes were so heavy (his eyes were totally watering), but when he did, parts of it actually fell apart; the fibers had disintegrated....then the house smelled for like an hour. It could've been scary, but was more funny that she actually tried that one.

I've been cooking/baking for the lst two days. I made Bannana Bread, Oatmeal raisin cinamon cookies, chocolate chip cookies, strawberry popcorn balls and Creme 'de Mint Cake.
The Creme de Ment Cake is my favorite you need
white cake mix
Creme de mint
fudge ice cream topping
whip cream 8oz
you mix the white cake mix like normal and add 3 tbs of Creme de mint
bake cake as directed
let cool
put a layer of fudge ice cream topping on top of cake
mix 3-4 tbs of Creme de mint in whip cream and layer on top of fudge then put in fridge until serving

ooo, I like chocolate whipped cream. Yeah by itself it's good. I think it would be nasty on pumkin pie, but on my mocha it was tasty.

That's one thing I don't like about cooking. It can get expensive when you need special ingredients!
I think in my case tho, I usually just lack inspiration. And motivation.
I always have to try to find something that all my brothers can eat. And then practically triple the recipe, to make sure there is enough.
It gets painful after awhile!

the apple pie was a hit,
Zipporah got her first christmas present last night, a doll with a bottle she was beaming ear to ear. She wouldn't put it down so she slept with it last night. I made her put the bottle away cause no babies in my house are allowed to go to bed with a bottle,it bad for their teeth and I was afraid that Zippa might chew on it and ruin it.

yesterday while I was making yet another home made pizza from scratch I realized that I had just made one last week for my hubby while I went Christmas shopping.
This pizza is different though, It's sauce was taco seasoning and tomatoes paste and I put taco seasoned hamburger on it with tomatoes. then topped with Cheddar cheese. It was a hit except for the Question that came out of my hubby's mouth when I was preparing it( Why didn't you go buy taco sauce for the sauce) Simple answer- it's the end of his pay check and I'm being creative with what I have. He slapped himself before I could respond-he knows better.

I just got done making my husband's lunch for tomorrow I like to make it in the mornings so it doesn't get too soggy before lunch, but today I have to stay p late for my kiln so. . . I made ham and cheese with mayo, mustard, and pickles on wheat bread. I also threw in a bag of Chips and poured some juice in his tupperware cup.

its this book that tells you how to eat and exercise the right way in order to maximize your progress and results......instead of 3 meals a day, you eat 6 smaller ones.....exercise and take sundays off......
that way, you arent completely depriving yourself. sunday you can eat what you want and you dont work out.
